MASCARPONE MIXTURE

Combine milk, sugar, and mascarpone into a small saucepan. Heat on medium-low heat until ingredients are 165°F. Temper in egg yolk and cool.

COFFEE SIMPLE SYRUP

Combine water, sugar and, S&D Espresso Coffee Extract into a small saucepan. Heat until liquid turns to syrup; then cool.

LADYFINGERS GARNISH

Preheat Oven to 400°F. Place egg whites in a bowl and beat until soft peaks form. Add 2 tbsp. sugar and keep beating until stiff and glossy. In another bowl, beat egg yolks and sugar until thick and pale in color. Fold half of the egg; fold in flour and baking powder, then fold in  remaining whites. Transfer mix to pastry bag with an 1/8 inch tip and pipe strips onto sheet pan. Bake until golden brown.

FRAPPUCCINO

In a blender, combine milk, mascarpone mixture, coffee simple syrup, and ice; blend. Place in cup and top with whipped cream. Place 3 ladyfingers halfway in the cup on one side. Sprinkle cocoa powder on top.

1/4 cup milk
2 tbsp. mascarpone cheese
2 tbsp. sugar

COFFEE SIMPLE SYRUP

1/2 tbsp. S&D Espresso Coffee
Extract
1/8 cup water
1/4 cup sugar

 

LADYFINGERS GARNISH

1 egg, separated
1/4 cup white sugar
1/4 cup all-purpose flour
1/4 tsp. baking powder

FRAPPUCCINO

1 cup milk
1/2 cup mascarpone mixture
1/4 cup coffee simple syrup
1 1/2 cups ice
Sprinkle of cocoa powder
