Chai Tea Waffle with Lemongrass Apple Butter and Chai Spiced Whipped Cream

CHAI MIX

Mix together all spices to create chai mix and reserve.

WAFFLE

Mix together all dry ingredients. Separate eggs and add yolks to dry mix. Beat egg whites until soft peaks form. Add milk, melted butter,
S&D Black Tea Extract; blend together. Cook in waffle iron to order.

LEMONGRASS APPLE BUTTER

Preheat oven to 250°. Combine apples, apple cider, brown sugar, lemongrass and salt in a large pot. Simmer and cover until apples are
soft. Remove from heat and stir in lemon juice, vanilla and cinnamon. Puree with an immersion blender. Bake uncovered stirring every 30 minutes until thickened and deep amber.

WHIPPED CREAM

In a deep mixing bowl, beat heavy cream until soft peaks form. Sprinkle confectioners sugar and prepared chai mix over cream; beat until soft peaks return. Serve waffles topped with lemongrass apple butter and a dollop of whipped cream.

CHAI MIX

2 tsp. cinnamon
2 tsp. ground ginger
2 tsp. ground cardamom
1 tsp. ground cloves
1 tsp. ground coriander
1/2 tsp. white pepper

WAFFLE

2 tbsp. S&D Black Tea Extract
1 1/3 cups all-purpose flour
1 tbsp. and 1 tsp. baking powder
1/2 tsp. salt
1 tbsp. sugar
2 eggs, separated
1/2 cup butter, melted
1 1/2 cups milk
2 tbsp. prepared chai mix

LEMONGRASS APPLE BUTTER

1 lemongrass, split down the middle
4 lbs. apples
2 cups apple cider
1 cup light brown sugar
1 tbsp. lemon juice
1 tsp. cinnamon
1 tsp. vanilla extract
1/2 tsp. salt

WHIPPED CREAM

2 cups heavy cream
1/4 cup confectioners sugar
1 tbsp. prepared chai mix
