Coffee’s Aggressive Side

COFFEE GASTRIQUE

In a 2-quart saucepan, combine honey, vinegar, lemon juice, S&D Espresso Coffee Extract, and 4-6 leaves of sage. Bring to a boil and then turn down heat to a simmer. Reduce to a thick sauce consistency and keep warm until served.

CHICKEN LIVERS

Pat chicken livers dry and brush with S&D Espresso Coffee Extract. Wrap livers in bacon and secure with toothpicks. Do a standard breading procedure on the chicken livers, dredging in flour and egg, then breading in panko breadcrumbs. Heat oil to 350° and fry livers in oil for 10 minutes, or until thoroughly cooked. When the livers are fried, coat with prepared coffee gastrique. Hold warm on a cooling rack until served. Plate with a small handful of green onions, micro greens and arugula. Top with a dollop of sour cream.

2 tbsp. S&D Espresso Coffee Extract
1/2 cup honey
1/2 cup rice wine vinegar
1 bunch sage
Lemon juice

CHICKEN LIVERS

2 tbsp. S&D Espresso Coffee Extract
1 lb. chicken livers
1/2 lb. Applewood smoked bacon
3 cups panko breadcrumbs
1-gallon oil
2 eggs
2 cups all-purpose flour
Water
Toothpicks

 

GARNISHES

1 bunch green onions
1/2 lb. micro greens
1/2 lb. arugula
Sour cream
