Mocha Almond Donut

DONUT

Combine yeast and warm water in the bowl of a mixer and let sit for 5 minutes until it starts to bubble. Add in all of the ingredients, other than the flour, and mix together. Slowly add in the flour on first speed. Once all of the flour is added in, turn to second speed for 7 minutes. Turn the dough onto the table and roll out to a 1 inch thickness. Cut out with the round cutter and let proof up for 15 minutes. Fry in deep fryer for 3 minutes on each side or until golden brown; let cool before filling and dipping.

COFFEE PASTRY CREAM

Scold the milk and vanilla. While the milk is on the burner, mix together the sugar, cornstarch and egg yolks. Slowly temper in the cornstarch mixture into the milk and bring to a boil. Remove from the burner and whisk in butter and S&D Espresso Coffee Extract; cover and cool.

CHOCOLATE GANACHE

Scold heavy cream and pour over the chocolate; whisk until smooth. Toast the almonds. Fill the donut with the coffee pastry cream. Dip the donut into the chocolate ganache, then the toasted almonds. Let the ganache harden on the donut and serve.

1, 1/4 oz. package yeast
1 and 1/2 oz. water
6 oz. milk
1/4 cup sugar
1/2 tsp. salt
1 egg
1 1/2 oz. shortening
2 1/2 cups all-purpose flour

COFFEE PASTRY CREAM

1/2 oz. S&D Espresso Coffee
Extract
18 oz. milk
1 vanilla bean
4.5 oz. sugar
1.3 oz. cornstarch
3.3 oz. egg yolks
1 oz. butter

CHOCOLATE GANACHE

8 oz. chocolate
8 oz. heavy cream
1/4 cup almonds
