Use stand mixer to crush Oreos. Add softened cream cheese, 1 egg, 1/4 cup condensed milk, and 1/4 cup S&D Espresso Coffee Extract. Add mixture to cake pop molds to form ball shape. Bake at 300° for 15 minutes. In a saucepan, mix water and sugar. Cook on high until a syrup consistency. Add 1/2 cup S&D Espresso Coffee Extract and remaining condensed milk; set aside. In a stand mixer, add heavy
cream and amaretto; whip into cream. Plate cheesecake bites with amaretto cream on top and garnish with strawberries.
