Put all ingredients in a mixer with a dough hook and process till well-combined and kneaded. Place dough in a well-oiled container and let dough rise till doubled in bulk. When raised, punch down dough and roll out beignets into approximately 3×4 rectangles. Fry immediately in 375°F oil, turning beignets often to promote even coloring. Drain and top with powdered sugar as desired.

1/2 cup milk
1/4 cup sugar
1 tsp. yeast
2 cups all-purpose flour
1/4 cup butter, softened
1/4 tsp. salt
1/4 tsp. cardamom seed
1 tsp. citric acid
Powdered sugar (garnish)
